Oil Free Apple Spice Muffins

MAKES: 12 muffins
CRISPY RATING: These are tasty! Not as good as a muffin from Perkins, but for 1 pt, they can't be beat!

Ingredients

  • 2 1/4 cups oat bran
  • 1 tablespoon baking powder
  • 1/4 cup packed brown sugar
  • 1/2 cup dried apples, diced
  • 1 1/4 cups skim milk
  • 2 large egg whites
  • 2 tablespoons corn syrup

1. Preheat oven to 425 degrees. Lightly grease muffin tins or use paper liners, set aside.

2. Mix the dry ingredients in a large bowl. Mix the milk, egg whites and corn syrup together and blend with dry ingredients.

3. Fill prepared muffin tins with batter divided equally. Bake 13-15 minutes. Test for doneness with a toothpick. Serve warm.


MY NOTES AND THOUGHTS:

These would be easy to make using any sort of dried fruit you like.
