Caramelized Apple Sweet Potatoes

MAKES: 6 servings
CRISPY RATING: Great mix of flavors and easy


  • 3 Large Sweet Potatoes, peeled and cut in 1 in. chunks
  • 2 to 3 Large Tart Apples, peeled, cored and cut in 1 in. chunks
  • 1/3 Cup Brown Sugar
  • 1/4 Cup Light Butter, melted
  • 1 Teaspoon Cinnamon

1. Melt butter in an oven safe casserole. Add the brown sugar and cinnamon. Mix well.

2. Add the apples and potatoes. Stir well to thoroughly coat with the caramel mixture.

3. Cover with a lid or foil and bake at 375 for 30 minutes, stirring once halfway through.

4. After 30 minutes, remove the cover, stir again, and bake for 10 more minutes, or until caramel is thickened and the potatoes are tender.


I've done this in the microwave in a pinch, too. Not bad, but it's better in the oven or in the crockpots.
