Cilantro Cream Chicken

Chicken Picture

MAKES: 6 servings
CRISPY RATING: Great flavor the first day, but it didn't hold up well as leftovers

  • 1 lb boneless Chicken Breast
  • 1 tsp Olive Oil
  • 3 oz Light Cream Cheese
  • 3/4 cup fat-free Skim Milk
  • 2 Tbsp fresh Lime Juice
  • 1/2 cup fresh Cilantro, chopped

1. Season chicken with salt and pepper. (I cut mine into strips.)

2. Spray skillet with Pam, add oil and brown chicken on both sides. Remove chicken from skillet, but keep warm.

3. Add cream cheese to skillet and stir until it melts. Whisk in the milk and stir until well blended. Add lime juice and cilantro.

4. Return chicken to skillet. Cover and simmer 15 to 20 minutes or until chicken is cooked through. Garnish with chopped cilantro before serving.

1. This one is nice and creamy, and the cilantro is obviously the main flavor. As it cooled, though, the sauce got clumpy and it didn't reheat well. Still- very worth making!
