Ginger-Plum Chicken

MAKES: 4 servings
YIELD: About 2.5 oz chicken and 1/2 cup sauce
CRISPY RATING: Very yummy!!

Ingredients
  • 10 oz chicken - thighs, breasts, whatever
  • Salt and pepper
  • 6 small plums, unpeeled, sliced
  • 1 Tbsp ginger
  • 1 Garlic Clove
  • 1/4 cup Chicken Broth
  • 1/4 can Frozen Apple Juice Concentrate, thawed, undiluted

1. Slice chicken into bite-sized pieces (or use thighs whole), season with salt and pepper, and brown them in a non-stick skillet with Pam. Remove from pan and set aside.

2. Recoat pan with Pam. Add plums, ginger and garlic and saut? until plums turn soft, about 2-3 minutes.

3. Add chicken broth and scrape up bottom of skillet. Add apple juice concentrate and stir.

4. Return chicken to pan and heat thoroughly, about 5 minutes.


MY NOTES AND THOUGHTS:

I really enjoy this recipe! I have only tried it with fresh plums. The recipe originally called for 4 chicken thighs, but I prefer using chicken breast cut into bite-sized pieces in general.
