Lime Cilantro Slaw

CRISPY RATING: Tangy, flavorful, not too heavy

Ingredients
  • 1/3 cup Mayonnaise - Smart Balance
  • 2 Tbsp fresh lime juice
  • 2 Tbsp sugar
  • 1/2 tsp dry mustard
  • 1 tsp kosher salt
  • 1/4 cup cilantro
  • 16 ounces cabbage, shredded coleslaw mix, 1 bag

1. Stir together the first five ingredients until well blended.

2. Combine slaw mix, cilantro, and mayonnaise mixture.

3. Refrigerate slaw at least an hour to develop flavor.


MY NOTES AND THOUGHTS:

I don't like my slaw overly mayo'd or excessively dry, and this is just right for me. It's got a great flavor - fresh cilantro makes a big, big difference.

If you use/like FF Mayo, I believe the pts drop to 1, but I've become a big fan of the Smart Balance mayo.
