Margarita Salmon

Ingredients
  • 1 teaspoon lime rind
  • 3 tablespoons lime juice
  • 1 tablespoon Tequila
  • 2 teaspoons sugar
  • 2 teaspoons vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon orange rind
  • 1 garlic clove, minced
  • 24 ounces salmon, 4 - 6 oz fillets

1. Mix together everything except salmon. Place in bag, add salmon to marinate for a 30 minutes to 1 hour. Don't let it go too long.

2. Grill, bake, whatever. We do it on the GF grill and it comes out fabulously! Typical salmon fillets take maybe 8 to 10 minutes, until they flake easily with a fork.

3. As an option - boil your leftover marinade and add a smidge of cornstarch to thicken it for a glaze over the salmon after they're cooked.


MY NOTES AND THOUGHTS:

I'll admit it - margaritas make me happy! :) This recipe has a nice margarita flavor and it matches so well with the salmon. And honestly, I rarely have orange or lime rind around, so I usually just omit that and add a bit more lime juice.
