Peanut Butter Brownies / Cake


Cakey Brownies

POINTS: 3
MAKES: 18 servings (from a 9x13 pan)
CRISPY RATING: More of a cake than a brownie, but a good strong peanut butter flavor

Ingredients
  • 3 oz Semisweet Chocolate
  • 1 1/2 cup Bisquick Reduced-Fat Baking Mix
  • 1 cup Sugar
  • 1/2 cup Peanut Butter
  • 1/2 cup unsweetened Applesauce
  • 1 1/2 tsp Vanilla Extract
  • 1/2 cup Egg Beaters

1. Heat oven to 350 degrees.

2. Melt and cool chocolate, either in double boiler or in microwave.

3. Mix all ingedients together and blend well.

4. Spread in ungreased rectangular 13x9x2-inch pan. Bake 20 to 25 minutes or until set; cool.


MY NOTES AND THOUGHTS:

1. These have a very strong PB flavor, but I wouldn't call them brownies. More of a Chocolate PB cake. Maybe if you under-bake them they would turn out less cakey.

2. If you make different-sized brownies:

  • 24 brownies = 2 pts each
  • 16 brownies = 4 pts each
  • 12 brownies = 5 pts each
  • 3. The original recipe also said "Note: if using bisquick original mix, increase baking mix to 1-3/4 cups." And add points of course!
