Apple Slaw Pork Chops

MAKES: 4 servings
YIELD: 1 pork chop plus a heap of slaw
CRISPY RATING: The slaw turns a little sweet, the pork chop tender

  • 4 Lean Boneless Pork Chops
  • 16 oz packaged Coleslaw Mix (shredded cabbage and carrots)
  • 1 medium Apples, sliced thin, or 1 cup Dried Apples
  • 15 oz Fat-Free Beef Broth
  • 2 tsp Honey
  • 1/2 tsp Ground Cinnamon

1. Put half the cabbage mix in an 8x8 pan or a small glass casserole dish.

2. Add 1/2 of the apple slices and then porkchops. Cover with the rest of the apples and then the slaw mix.

3. Mix together the remaining ingredients. Pour over the porkchop / slaw layers.

4. Cover and cook for 30 minutes in the microwave. I cooked it at 80% power.


1. I wasn't sure if I liked this at first. It has a rather unique taste. But, it grew on me very quickly and yum!
