Red Beans, Rice and Spicy Sausage

MAKES: 4 servings
CRISPY RATING: Watch the Creole seasoning - it gets HOT!

  • 1 Teaspoon Olive Oil
  • 1 Small Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Red Pepper, chopped
  • 1 Clove Garlic, minced
  • 2 Teaspoons Cajun Seasoning, or to taste
  • 8 Ounces Turkey Kielbasa, spicy, chopped or sliced
  • 8 Oz. Tomato Sauce, canned
  • 15 Ounces Canned Red Kidney Beans

1. Sautee onions, celery, red pepper and garlic in oil until soft. Add seasoning and sausage. Add tomato sauce and kidney beans. Simmer for a little bit. Simmer 'til warm.

2. Serve over cooked rice.


1. This goes together incredibly easily, and it can sit for awhile, too.

2. I often eat this without the rice, but with noodles or just with a salad.

3. I don't do enough of this type of cooking to know if there is a difference between Cajun seasoning and Creole seasoning, but I found Creole, so that's what I use.

4. The original used spicy sausage links, but I subbed out lower fat turkey smoked sausage instead.
